Preheat oven to 425 F (220 C).

If your carrots are cold (e.g., stored in the fridge), then warm them to room temperature by placing them in the oven. This prevents the coconut oil from solidifying.

Toss with coconut oil and cinnamon and dash of salt.

Spread onto a baking tray lined with parchment paper.

Bake for 15-25 minutes until fries are softened/crispy to your liking.

Sprinkle more cinnamon on top and serve.
