Ingredients: 5 lb. bag of potatoes – peeled and sliced in wedges; 8 oz. of Monterey Jack or Cheddar cheese - grated; Pat dry the potatoes and place in a bowl.; Rub for Fries:; ½ tsp. ground cumin; ½ tsp. black pepper; ½ tsp. brown sugar; ½ tsp. garlic powder; ½ tsp. ground curry powder; ¼ tsp. chili powder; ¼ tsp. salt; Olive oil to make a paste; ~ Cilantro Dipping Sauce ~; Ingredients:; 1 bunch of fresh cilantro; 5 cloves of garlic; 2 vine ripe tomatoes; 2 tablespoons of balsamic vinegar; 1 tsp. of sugar; ¼ tsp. salt; ¼ tsp. black pepper

Preheat Oven 350 degrees:

Combine all of the spices in a small bowl and drizzle olive oil to make a paste from the rub.

Place the rub in with the potatoes and toss the potatoes so each potato wedge is coated.

Drizzle a baking pan with olive oil and place the potatoes in the pan.

Bake 40-45 minutes until the potatoes are golden.

Remove the potatoes to a platter and scatter the grated cheese on the potatoes while they are hot.

~ Cilantro Dipping Sauce ~

Combine all of the above ingredients in a food processor and give a few good chops.

Serve on the side with the potato wedges to dip.
